My daughter especially loves to hang out with me while I cook and stir the pot and taste the food as we go.  Its a great way for us to spend time together as well as teach the value of cooking home prepared nutritious meals.

One recipe that I use avocado in time after time is in my chicken fajita dish.  Its so quick to make and I can certainly beat Rachel Ray in her 30 minute quest.

I simply slice up and heat up left over turkey (from Thanksgiving) and spice it up with taco seasoning.  Then place on top of a warmed fajita with sour cream, rice, salsa, avocado and cheese and then roll up, voila - quick easy peasy lemon squeezy.  The kids love to make their own and I feel good that they are getting the natural nutrients they deserve.y eservarece. getting the natural nutrients they deservce.cheese
