This weekend I decided to winterize my garden as the organic garden was just about done.
This is my last harvest, not bad huh. Now I need to find something to do with all those chilli peppers! Any ideas?

Peppers…Jalapeno, Banana, green…what ever you like – Enough for 2 cups
- 2 Cups cider vinegar
- 6 cups sugar
- 2 pouches Ball Liquid Fruit Pectin
Puree peppers in food processor (you can add some of the vinegar if needed)
Combine the peppers with vinegar and sugar
Bring this to a boil over high heat and boil for 10 mins
Stirring frequently
Once it comes to a full boil, then add the pectin
Once it comes to a full boil, then add the pectin
Bring to another full boil
Boil for 1 minute
Remove from the heat
Fill your jars, leaving at least 1/4 head space
Process jars for 10 mins
I love adding pepper jelly to a cracker with some cream cheese! Wonderful combination.
I think I'm going to make some of these pepper jelly's and give these out as Christmas gifts to friends and family....

You can dehydrate them and make your own crunched red peppers.
